Ranch Steak recipe
3 tablespoons olive oil
1 medium onion, thinly sliced
1 1/2 to 2 pounds round steak

1/2 cup sour cream
Heat oil in large heavy, non-stick skillet. Fry onions until limp. Remove from pan and set

Mom's Meat Loaf recipe
2 eggs
3/4 cup milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash of pepper
1 1/2 pounds lean ground beef
1 cup catsup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce

Chicken and Dumplings recipe
1 fryer or stewing hen
1/2 onion, chopped
2 stalks celery, rough chopped
4 carrots, sliced 1/2 inch thick
Salt and pepper to taste
Dumplings:
3 tablespoons shortening
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup milk
Put the chicken and giblets, if desired, into a large pot. Add water to cover. Bring to a
boil, and lower heat to keep chicken at a low boil. Add the onion. Stew chicken for 1 1/2
to 2 hours, until done, adding more water as needed. Remove chicken to platter and let
cool. Add the other vegetables to the broth and maintain at a low boil.
When chicken is cool, bone and skin it. Tear or cut the chicken into bite-size pieces
and add to the stew.
Raise heat to bring a high boil while you prepare the dumplings.

Baked Ham recipe
1 cooked ham, half or whole
Ground cloves, to taste

Place cooked ham in pan. Rub in 1 tablespoon brown sugar and sprinkle
with cloves. Pare and cut apple in eighths, place around and over ham.
Sprinkle brown sugar over apples. Decorate with pineapple rings and
maraschino cherries. Cover and bake for about 1 hour at 350 degrees F,
basting frequently.
Salmon Bake recipe
1 1/2 cups cooked rice
1 can salmon
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons onion flakes
1 egg
2 egg whites, beaten
Mix well and pour into a casserole. Spread 2 tablespoons melted butter on top and
bake at 375 degrees F for 30 minutes.
Farmer's Garden Stew
1 medium onion
2 to 3 cloves garlic (1 to 2 teaspoons, minced)
1 teaspoon salt
4 tablespoons olive oil
1 medium eggplant
2 small zucchini (about 6 inches long), or substitute yellow squash
3 medium tomatoes
1 bell pepper, any color
1/2 teaspoon thyme
1 teaspoon black pepper
Chop onion, mince garlic and combine them with salt and olive oil in a heavy, wide
pan. Set the pan over high heat. Stir onions occasionally as you prepare vegetables.
Trim the eggplant. Peel it only if you want; it isn't necessary. Cut into 1-inch cubes
and add it to the pan as you do, stirring. Trim zucchini and cut into 1-inch cubes. Add
it to the pan as you prepare it. Peel and core tomatoes. Chop them and add to the
pan. Core the bell pepper, dice it and add it to the pan. Add thyme and black pepper.
Reduce heat to medium-low. Stirring occasionally, cook the mixture, uncovered,
about 30 minutes or until vegetables are tender.
Serves 4.
